Simon Rimmer served up a tasty chicken Kiev with garlic butter and warm coleslaw on Steph’s Packed Lunch.
The ingredients are: 300g unsalted butter, 3 cloves garlic, peeled and crushed, ½ lemon, juiced and zested, 1tbsp tarragon, chopped, 4 x 175g chicken breast fillets, 30g plain flour, 1 medium free-range egg, beaten, 175g fresh breadcrumbs, 130g fine polenta and Sunflower oil to fry.
To serve: 75g unsalted butter, 3 carrots, peeled and julienned, 2 red onions, peeled and thinly sliced, 1 head celeriac, peeled and julienned and 1 lemon, zested and juiced.
