James Martin Ham and cheese croquetas with rapeseed mayo recipe on Saturday Kitchen

James Martin makes ham and cheese croquetas with rapeseed mayo for Tom Parker from the Wanted.

James says: “Rapeseed oil is a great oil to use in mayonnaise – perfect for dipping deep-fried bundles of cheesy deliciousness in this easy tapas recipe.”

The ingredients are: 75g butter, 200g plain flour, 500ml milk, salt and freshly ground black pepper, 75g fresh breadcrumbs, 150g ham, chopped, 100g Lincolnshire poacher cheese, 1 small bunch fresh parsley, chopped, 75g plain flour, 2 free-range eggs, 100g panko Japanese breadcrumbs and rapeseed oil, for deep frying.
