Simon Rimmer sprouts pancake and bake sprouts recipe on Steph’s Packed Lunch

Simon Rimmer served up sprouts three ways including tasty sprouts pancake and bake sprouts for the festive season on Steph’s Packed Lunch.

The ingredients for the sprout bake: 1tbsp vegetable oil, 200g pancetta or thick cut smoked bacon lardons, 500g small new potatoes, cut into thick slices, 500g Brussel sprouts, halved, 2tbsp thyme, chopped, 2 cloves garlic, peeled and sliced, 100g parmesan cheese, finely grated, 400ml double cream, Salt and pepper and 150g mature cheddar, grated.

For the sprout pancakes: 200g self-raising flour, 1tsp bicarbonate of soda, 50g caster sugar, 1 medium free-range egg, 50g unsalted butter, melted, 250ml whole milk, 125g cottage cheese, 225g sprouts, finely sliced, 15g unsalted butter, 8 rashers streaky bacon, grilled until v crispy and Maple syrup, to drizzle.
