James Martin Apple and Pear Crumble with Vodka and Custard recipe on James Martin’s Saturday Morning

James Martin served up a delicious apple and pear crumble with vodka and custard on James Martin’s Saturday Morning.

The ingredients are: 3 pears, peeled and diced, 3 cox apples, peeled and diced, 50g butter, 50g caster sugar and Splash of vodka.

For the crumble: 200g plain flour, ½ tsp ground ginger, 100g butter, diced and 100g demerara sugar.

For the custard: 300ml milk, 300ml double cream, 2 vanilla pods or 1 tsp vanilla bean paste, 75g caster sugar, 8 egg yolks and Splash of vodka.
