Simon Rimmer served up a delicious buttermilk tart with berries on Sunday Brunch.
The ingredients for the pastry are: 250g plain flour, 3 tbsp icing sugar, 125g butter, cubed (unsalted) and 1 egg.
For the filling : 200g sugar, 3 tbs flour, Pinch salt, 3 large eggs, 350ml buttermilk, 60g melted butter, Zest and juice half lemon and 1 Tsp vanilla paste.
Mixed fruit and icing sugar to serve.
