Simon Rimmer served up a tasty creamy veggie carbonara on Steph’s Packed Lunch.
The ingredients are: 300g spaghetti, 2 eggs and 2 yolks, beaten, 200g sundried tomatoes, 50g shredded spinach, 2 tbsp fresh parsley, chopped, 2 cloves finely crushed garlic, 175g finely grated parmesan and 100g smoked cheddar.
To serve: Extra parmesan shavings and Chopped parsley, to garnish.
