Freddy Forster pulled pork tacos recipe on Steph’s Packed Lunch

Freddy Forster served up tasty pulled pork tacos on Steph’s Packed Lunch.

The ingredients for the pulled pork are: 1kg pork shoulder (boneless), Pinch of smoked paprika, Salt/pepper, 1 clove of garlic, 1 carrot, Sprig of rosemary, 450ml water and 150ml white wine.

For the spiced red kidney beans: 2tbsp vegetable oil, 1 x red onion finely chipped, 1/4 red chilli finely chopped, 1/4 teaspoon Cajun spice, 2 tins of cooked red kidney beans, drained but reserve the liquid and 3 tbsp tomato ketchup.

For the taco salad: 1/4 iceberg lettuce finely sliced, Few leaves of coriander, 4 spring onions, finely sliced, A dash of lemon juice, Drizzle of olive oil, Salt & pepper.

To finish: 150ml sour cream, Pinch of chilli flakes and 24 taco shells.
