Simon Rimmer chocolate meringue tart recipe on Sunday Brunch

Simon Rimmer served up a delicious chocolate meringue tart on Sunday Brunch.

The ingredients are: 300g crushed digestives, 30g cocoa powder and 140g melted butter.

For the filling: 400ml double cream, 400g chocolate, 40g butter, 50g sugar and 1 teaspoon vanilla extract.

For the meringue: 3 large egg whites, 1 teaspoon vanilla, ¼ teaspoon cream tartare and 100g sugar.

  1. Too much talking..more emphasis on exact ingredients ..bit of this and more of that isn’t good enough..and how long in the oven and at what temperature!!!…..not just put it in the oven doesn’t always explain
