Freddy Forster served up a tasty broccoli pesto penne pasta on Steph’s Packed Lunch.
The ingredients: 200g wholemeal penne.
For the broccoli pesto: 25g raw broccoli florets, grated finely, 10g Parmesan cheese, grated finely, 1tbsp pine nuts, 1 clove garlic, peeled and finely chopped, 5 leaves fresh basil, 45ml olive oil and 20ml rapeseed oil.
For the lemon creme fraiche: 1 x broccoli stem, sliced, 1tbsp vegetable oil, 3tbsp creme fraiche and Zest of 1 lemon, put the lemon aside to juice.
To serve: Few leaves of basil, 1tsp of red chilli, finely sliced and Shavings of parmesan cheese.
