Simon Rimmer cheese, onion and potato pie with chilli recipe on Steph’s Packed Lunch

Simon Rimmer served up a tasty cheese, onion and potato pie with chilli on Steph’s Packed Lunch.

The ingredients for the pastry are: 225g plain flour, 115g butter, cold and cubed, Pinch salt, 50ml whole milk and 1 medium free-range egg yolk.

For the filling: 2tbsp olive oil, ½ onion, peeled and finely chopped, 200g potato, cubed and cooked, 150g fresh curd cheese (or cream cheese), 100g mature Montgomery cheddar, grated, 75g Parmesan cheese, finely grated, 1tbsp thyme, chopped, 1 red chilli, finely chopped and 1 medium free-range egg.

To serve: Mashed potato, Gravy and Veggies.
