Simon Rimmer crushed pea pancakes with feta, cucumber and poached eggs recipe on Sunday Brunch

Simon Rimmer served up tasty crushed pea pancakes with feta, cucumber, tomatoes and poached eggs on Sunday Brunch.

The ingredients are: 225g frozen, peas, thawed and lightly crushed, 2 caramelised onions, Bunch chopped mint, Zest 1 lime, 200g gram flour and 75ml (approx.) water.

Serve with poached eggs.

For the topping: 125g crumbled feta, half diced cucumber, juice of the lime and 12 blush toms and a little of the oil from them.
