Simon Rimmer served up tasty Jersey Royals with wild garlic and feta cheese on Steph’s Packed Lunch.
The ingredients for the whipped feta: 250g feta cheese, crumbled, 150g Greek yoghurt, 1 clove garlic, peeled and grated, 15ml extra virgin olive oil and ½ lemon, zested and juiced.
For the wild garlic and Jersey Royals: 1kg jersey royals, cooked, Handful wild garlic leaves, 1tsp sea salt and 100ml extra virgin olive oil.
To serve: 100g pine nuts, toasted.
