Freddy Forster served up tasty Indonesian style chicken satay skewers on Steph’s Packed Lunch.
The ingredients are: 4 boneless and skinless chicken thighs, cut into a medium dice, ¼ tsp curry powder, Good pinch turmeric, 6tbsp smooth peanut butter, 2 cloves garlic, peeled and crushed to a puree, 1tbsp ginger, peeled and finely chopped, 3tbsp soy sauce, 4 limes, juiced, 50ml warm water, use more to loosen a little if needed, 12 leaves of coriander and 1 red chilli, finely chopped.
For the cucumber salad: 1 baby gem, 150g cucumber, peeled and finely sliced, Salt/pepper, 2tbsp olive oil, 1 lemon, juiced and Pinch of red chilli flakes.
For the garnish: ½ lemon, grilled, ¼ bunch of spring onions, chopped and Few leaves of coriander.
