Simon Rimmer Beef Satay Salad with Egg Noddles recipe on Sunday Brunch

Simon Rimmer served up a tasty Beef Satay Salad with egg noodles and tomatoes on Sunday Brunch.

The ingredients are: 2 x 225g aged sirloin steaks, room temp, 300g cooked egg noodles, 6 sliced spring onions, 2 crushed tomatoes, Half cucumber, into deseeded half moons, 1 sliced red chilli and Chopped coriander.

For the sauce: 150g smooth peanut butter, Juice and zest 2 limes, 60ml rice vinegar, 60ml soy, 2 tsp sesame oil, 50ml hot sauce (sriracha), Tsp ground ginger, Approx 70ml coconut water and Salted cashews, lightly crushed.
