Simon Rimmer peanut butter and marmite ice cream sandwich recipe on Sunday Brunch

Simon Rimmer served up a delicious peanut butter and marmite ice cream sandwich on Sunday Brunch.

The ingredients for the ice cream are: 1 x 397g tin condensed milk, 600ml whipping cream, 1 Tsp vanilla paste, 125g crunchy peanut butter, mixed with 2 tbsp of warm water to loosen and 1 Tbsp marmite.

For the biscuits: 175g flour, 125g porridge oats, 45g desiccated coconut, 130g soft light brown sugar, Tsp ground ginger, 150g butter, 2tbsp golden syrup and Tsp bicarb – 2tbsp hot water.
