Simon Rimmer fish burger with sweet and sour sauce recipe on Steph’s Packed Lunch

Simon Rimmer served up tasty fish burgers with sweet and sour sauce on Steph’s Packed Lunch.

The ingredients are: 300g white fish, cod etc, finely chopped, 200g smoked haddock, finely chopped, 100g smoked salmon, finely chopped, 1tsp salt, 1tsp bicarbonate of soda, 1tsp chilli flakes, 1tbsp dill, chopped and Vegetable oil to fry.

For the sauce: 200ml vinegar from pickled gherkins, 200g tomato ketchup, 1tbsp Worcestershire sauce, 50g honey and 1tbsp tabasco.

To assemble: 4 brioche buns, toasted, 4tbsp mayo mixed with 2tbsp yellow mustard
4 gherkins, sliced and 4 beef tomatoes, sliced.

To serve: fat chips.
