Shivi Ramoutar served up a tasty and easy to make roast dinner (lemon roasted spring chicken and potato traybake) for Mother’s Day on This Morning.
The ingredients are: 2 small onions, peeled and quartered, 6 garlic cloves, unpeeled, smashed, 1 lemon, sliced, pips removed, 500g baby new potatoes, 100g fresh or frozen peas, 1 heaped tbsp dried oregano, 2 tbsp olive oil, 100ml chicken stock, 8 chicken pieces (thighs or drumsticks), bone-in, skin-on and 25g butter.
To serve: Crusty bread and Freshly chopped parsley, optional.
