John Whaite spicy jalapeno loaded chicken burger with corn fritters recipe on Steph’s Packed Lunch

John Whaite served up spicy jalapeno loaded chicken burgers with corn fritters on Steph’s Packed Lunch.

The ingredients are: 500g chicken mini fillets , 215g jar sliced green jalapenos and 1 tbsp olive oil.

For the fritters: 1 large egg , 50g plain flour , 198g can sweetcorn (keep the juice), 50g mature Cheddar, grated, 2 tbsp finely chopped chives, plus extra for sprinkling, 2 spring onions, finely chopped, 1 tbsp jalapenos (from the above jar), roughly chopped , 1 tbsp olive oil , 1 large red pepper, sliced into 6 thick rings (deseeded) , Fine sea salt and freshly ground black pepper.

To serve : 4 brioche buns, sliced , Mayonnaise, for spreading, Handful of baby spinach leaves and Tabasco sauce.
