Marcus Wareing apple tarte tatin with figs and creme fraiche recipe on Marcus Wareing’s Tales from a Kitchen Garden

Marcus Wareing served up a delicious apple tarte tatin with figs and creme fraiche on Marcus Wareing’s Tales from a Kitchen Garden.

The ingredients for the tarte tatin are: 320g packet ready-rolled all-butter puff pastry, 6–8 Braeburn apples, peeled, quartered and left to dry out in the fridge overnight, 100g cold butter, softened, 100g golden caster sugar, 2 cardamom pods and 1 cinnamon stick.

For the fig pickle: 100g caster sugar, 20g fresh root ginger, sliced, 2 cinnamon sticks, 4 cloves, 6 cardamom pods, 1kg figs and leaves, figs pierced all over, 50ml honey and 150ml apple cider vinegar.

For the fig creme fraiche: 200g creme fraiche and 4 fresh figs, chopped.
