Phil Vickery lemon drizzle cake (classic and gluten-free versions) recipe on This Morning

Phil Vickery served up a delicious classic lemon drizzle cake together with a gluten free version using his friend Ruth’s recipe on This Morning.

The ingredients are: 225g butter or cake margarine, soft, 225g golden caster sugar, 4 large eggs at room temperature, beaten, 225g self raising flour, sieved, 1 level tsp baking powder, Juice and zest 4 large lemons and 4-5 tbsp granulated sugar.

For the gluten-free loaf: 200g gluten free self raising flour, ¼ level tsp xanthan gum, 1 level tsp gluten free baking powder, 160g caster sugar, 165g soft (tub for cakes) cake margarine, melted, 2 large eggs, room temperature, Finely grated zest of 1 large lemon, 2 tbsp lemon juice, Juice of 2 large lemons and 6 tbsp granulated sugar.
