Phil Vickery served up tasty swede and cauliflower steaks with chimichurri and bearnaise sauces in and steak and sauce masterclass on This Morning.
The ingredients for cauliflower steak are: 1 medium cauliflower (800g), 1 tsp turmeric powder, 1 tsp sweet paprika powder, sprinkle of chilli flakes, 1 tsp dried garlic granules, 1 tsp dried onion granules, Salt and Ground pepper.
For the bearnaise sauce: 10 crushed white peppercorns, 2 small shallots, very finely chopped, 4 x 6cm sprigs of tarragon, leaves removed, 100 mls tarragon vinegar, 50ml dry white wine or water, 175g unsalted butter, 5 egg yolks, Lemon juice, Salt and Grounds pepper.
For the chimichurri sauce: 8 cloves garlic, peeled, 1 tbsp fresh green chilli chopped, 6 tbsp fresh coriander, 4 tbsp fresh parsley, 1 tbsp fresh oregano, 6 tbsp white wine vinegar, 8 tbsp extra virgin olive oil, Salt, Pepper and Sugar.
