Matt Tebbutt served up tasty Chipotle Corn Ribs on Go Veggie and Vegan.
the ingredients for the corn ribs are: 8 half corn cobs, 1 tsp ground cumin, 1 tsp ground coriander , 1 tsp smoked paprika, 1 tsp oregano, 1 tsp dried chilli, 1tsp garlic granules, 1 tsp brown sugar, 1 tbsp rapeseed oil and pinch of sea salt.
For the Chipotle Mayo: 50ml aquafaba, 2 tbsp white wine vinegar, pinch of sea salt, 250ml neutral oil, 1tsp Dijon mustard, 1 garlic clove, minced, 1 tbsp chipotle paste, squeeze of lime, salt and pepper to taste.
To garnish: lime wedges, red chilli, spring onions and coriander.
