Simon Rimmer halloumi burger recipe on Steph’s Packed Lunch

Simon Rimmer served up a tasty halloumi cheeseburger on today’s episode of Steph’s Packed Lunch.

The ingredients: 200ml buttermilk, 1 lemon, juiced, 4 slices halloumi cheese – approx. 25mm thick, 250g cornflour, sifted, 1tsp salt and 1tbsp bicarbonate of soda.

For the sauce: 70g gochugang, 30ml honey, 30g tamarind sauce, 3cm piece ginger, peeled and grated, 100ml light soy and 50ml black rice vinegar.

To garnish: 50g mayo, 50g salad cream, Juice from the kimchi, 150g kimchi, drained (keep the juice), 50g sesame seeds, 50g wakame flakes, Handful coriander, chopped and 4 toasted brioche buns.
