Simon Rimmer served up a tasty lamb shank with cheesy mash potatoes on Sunday Brunch.
The ingredients are: 4 x lamb shanks, 1 chopped onion, 1 chopped carrot, 2 sticks chopped celery, 2 bay, 4 sprigs rosemary, 4 sprigs thyme, 25g flour, 250ml passata, 500ml red wine and 500ml strong beef stock.
For the mash: 500g mashed potato, 150g butter, 50g finely grated parmesan and 75g strong grated cheddar.
