Simon Rimmer served up a delicious sticky pumpkin pudding with ice cream on Steph’s Packed Lunch.
The ingredients are: 100g pitted dates, 150ml water, Tsp bicarb, 75g butter, 75g muscovado sugar, 50g treacle, 2 eggs, 150g flour, 2 tsp baking powder, 50g mixed fruit, Zest 1 orange and 200g roasted squash/pumpkin, pureed.
For the sauce: 200g butter, 250g brown sugar, 250ml cream, 50ml orange liqueur, Half tsp fine sea salt.
