Ainsley Harriott Creole jambalaya with smoked spicy sausages recipe on Ainsley’s Good Mood Food

Ainsley Harriott served up a tasty Creole/Cajun jambalaya with smoked spicy sausages(chorizo), tiger prawns and tomatoes on Ainsley’s Good Mood Food.

The ingredients are: 1–2 tbsp light olive or sunflower oil, 6 skinless and boneless chicken thighs, quartered, 125g smoked spicy sausage(like chorizo), sliced, 1 large onion, finely chopped, 2 peppers (red and/or green), de-seeded and diced, 2 celery sticks, trimmed and finely chopped, 4 spring onions, trimmed and sliced, whites and greens separated, garlic cloves, minced, 1 tsp dried oregano, 1 tsp fresh thyme leaves, 1 tsp sweet smoked paprika, ½ tsp cayenne (more if you like it spicy), 300g long-grain rice, 2 tsp tomato purée, 1 x 227g tin chopped tomatoes, 600ml chicken or vegetable stock, 150g medium raw or cooked prawns, peeled and deveined if necessary, from a sustainable source, a handful of baby plum or cherry tomatoes, halved, 3 tbsp chopped flat-leaf parsley, plus extra to serve, sea salt and freshly ground black pepper and Tabasco (optional), to serve.
