Baked Sea Bass with red wine sauce, sweet potato and sweetcorn recipe by Phil Vickery on This Morning

Phil Vickery cooks a baked sea bass with red wine sauce and vegetables including sweetcorn on This Morning.

The ingredients are: 4-5 tbsp olive oil, Ears from two fresh sweetcorn, cut away with a knife or frozen will do, 2 small red onions, very finely sliced, 2 medium sweet potatoes, peeled and cut into 2cm cubes, 100mls fish stock, Salt, Freshly milled black pepper, 1kg frozen whole bass defrosted, 4 tbps olive oil.

For the sauce: 400ml red wine, 4 level tsp unrefined sugar, 300ml strong fish stock, ½ 10g fish stock cube, 25g unsalted butter, 1 tbsp double cream.
