Simon Rimmer coconut rice pudding with lemongrass and ginger fruit recipe on Sunday Brunch

Simon Rimmer served up a delicious coconut rice pudding with lemongrass and ginger fruit on Sunday Brunch.

The ingredients are: 100g pudding rice, 400ml tin coconut milk, 400ml almond milk, 1 vanilla pod and 75g soft light brown sugar.

For the fruit: 200ml water 200g sugar, 1 vanilla pod, 2 stalks lemongrass and 50mm piece ginger, 100g each of strawberries, blueberries, mango and banana.
