Simon Rimmer Halloumi And Bean Curry recipe on Sunday Brunch

Simon Rimmer served up a tasty halloumi and bean curry on Sunday Brunch.

The ingredient are: 1tsp black mustard seeds, 12-15 curry leaves, a little oil for frying, 1 sliced onion, 4 cloves of crushed garlic, 3-4cm of grated ginger, 1tsp fenugreek, 1tbsp madras curry powder, 1tsp coriander, 1tsp ground cumin, 1tsp chilli powder, a bruised lemon grass stalk, a tin of coconut milk, 1tbsp of tamarind, 1tsp of sugar, 500g thick slices of halloumi, 125g of edamame beans and handful of chopped spinach.

To Serve: sticky rice, coriander, lime and naan bread.
