Gareth Ward served up tasty beef with black bean sauce, green pepper oil and green pepper mayonnaise on James Martin’s Saturday Morning.
The ingredients for the sauce are: 120g mirin, 38ml sesame oil, 30ml rice vinegar, 235ml dashi soy, 235g granulated sugar, 25g minced garlic, 25g minced ginger, 150g minced black beans, 117ml dashi, 30g cornflour, 13g dashi and Garlic salt.
For the green pepper oil: 500g green peppers and 1L sunflower oil.
For the green pepper mayo: 4 egg yolks, 30ml rice vinegar, Salt, 400ml of double green pepper oil and 100ml sunflower oil then season with mirin.
To garnish: Spring onions finely sliced into matchsticks and Button mushrooms finely sliced.
For the beef: A5 beef rib.
