Raymond Blanc cooked a tasty Morteau sausage salad with new potatoes on Simply Raymond Blanc.
The ingredients for the sausage and poached eggs: 1 Morteau sausage, 4 eggs, to poach, 2 tbsp white wine vinegar, 2 pinches sea salt and 1 pinch ground black pepper.
For the white wine potatoes: 500g Belle de Fontenay potatoes (or Charlotte), skin on, washed , 45g Shallots, peeled & finely chopped, 25g white wine, dry, 45g white wine vinegar, x3 bay leaf, 1 sprig thyme, 5g sea salt, 1g Pepper, white, freshly ground and 45g Olive oil.
To finish: 100g bitter lettuce mix, such as frisee and radicchio and 2 tsp chives.
