James Martin lemon sole goujons with cucumber salad and mustard dressing recipe on James Martin’s Saturday Morning

James Martin served up lemon sole goujons with cucumber salad and mustard dressing on James Martin’s Saturday Morning.

The ingredients for the goujons: 1 Lemon sole, filleted, 25g plain flour, salt and pepper, 75g panko breadcrumbs, blitzed, 2 tbs parsley and 2 eggs beaten.

For the salad: 2 large gherkins julienned, ½ cucumber, sliced, ½ red onion peeled and diced and 2 tbs parsley chopped.

For the dressing: 1 tbs Dijon, 1 tbs white wine vinegar, 50ml veg oil, Salt and pepper, Splash water.

To serve: Thick Greek yoghurt.
