Jean-Christophe Novelli mum’s baked apple tarte tatin with caramel recipe on Simply Raymond Blanc

Jean-Christophe Novelli served up a delicious baked apple tarte tatin with caramel using his mum’s recipe on Simply Raymond Blanc.

The ingredients are: 5 apples (peeled and halved, just before using), 100g butter, 200g sugar, 1 star anise, ½ vanilla pod (halved lengthways), 6 cardamom pods and 1 large pack ready-made puff pastry.
