Simon Rimmer served up a delicious banana cheesecake tart on Sunday Brunch.
The ingredients for the base are: 275g crushed digestives, the zest of 1 lemon and 150ml melted butter.
For the filling: 250g cream cheese, 250g ricotta, 75g sugar, 3 eggs and 1 scraped out vanilla pod.
For the topping: 2 bananas and dust with 50g icing sugar.
For the sauce: 175g dark brown sugar, 175g butter, 175ml co-conut milk and 50ml banana liqueur.
