Simon Rimmer served up a delicious chocolate figgy pudding on Sunday Brunch.
The ingredients are: 50g of chopped dates, 150g dried and chopped figs, 1 tsp bicarb, 350ml of water, 100g butter, 200g golden caster sugar, 2 eggs, 300g self-raising flour, 15g cocoa powder, 75g of chopped chocolate, tsp cinnamon, zest of 1 orange and a tsp of vanilla.
For the sauce: 200g brown sugar, 200g butter, 50ml rum, 200g double cream and 50g dark chocolate.
To serve: vanilla or salted caramel ice cream.
