Benjamina Ebuehi served up a delicious plum pavlova with cinnamon, double cream and pistachios on Lorraine.
The ingredients are: 250g caster sugar, Squeeze of lemon, 150g egg whites and 2 tsp cornflour.
For the plums: 300g ripe plums, stoned and cut, 660g caster sugar and 1 tsp ground cinnamon.
To decorate: 600ml double cream, 1 ½ tbsp icing sugar, 1 tbsp vanilla bean paste and Handful pistachios, roughly chopped.
