Ruby Bhogal chicken, leek and wild mushroom pie recipe on Steph’s Packed Lunch

Ruby Bhogal from the Great British Bake Off, served up a tasty chicken, leek and wild mushroom pie on Steph’s Packed Lunch.

The ingredients are: 2 tbsp olive oil, 10g unsalted butter, 600g chicken breast, diced, 3 garlic cloves (finely chopped), pinch sea salt, pinch black pepper, handful of fresh thyme, 200g leeks (chopped), 15g wild mushrooms, 1 tbsp plain flour, 400ml chicken stock, 1 tbsp low fat creme fraiche, 2 tsp Dijon mustard and 5 sheets pre-made filo pastry.
