Ainsley Harriott Brown Stew Chicken with with Rice N’ Peas recipe on Ainsley’s Food We Love

Ainsley Harriott served up his mum’s Brown Chicken stew with with Rice N’ Peas on Ainsley’s Food We Love.

The ingredients are: 6-8 skinless chicken thighs, 2 tbsp dark soy sauce, 2 tbsp Worcestershire sauce, 3 garlic cloves, minced, ½ tsp sweet paprika, 1 tbsp of dark brown sugar, 5cm fresh root ginger, finely sliced, 1 tsp fresh thyme leaves, Salt & freshly ground black pepper, 1 onion, diced, 1 red pepper, deseeded and chopped, 1 green pepper, deseeded and chopped, 500ml chicken stock or water, 2 large ripe tomatoes, diced, 1 tbsp tomato ketchup, 1 scotch bonnet, whole, 1 tsp allspice, 1 bay leaf, 1 tsp fresh thyme leaves and 1 tbsp chopped parsley.
