Simon Rimmer Sweet Potato and Chickpea Falafel Wrap recipe on Sunday Brunch

Simon Rimmer served up tasty Sweet Potato and Chickpea Falafel Wrap on Sunday Brunch.

The ingredients are: 700g sweet potatoes (Approx. 2 whole spuds), 15g ground cumin, 15g ground coriander, 5g ground cinnamon, 10g finely chopped parsley, 10g Aleppo chilli flakes, Zest half lemon, 125g flour, Clove crushed garlic, 200g chickpeas – mashed by hand or roughly chopped, 10g chopped mint and 100g sesame seeds to roll in.

For the salad: 6 chopped plum toms, 1 deseeded, chopped cucumber, ¼ chopped red onion, Handful chopped parsley, Juice n zest 1 lemon, 50ml x v olive oil and 75g feta, crumbled.

To serve: 100g thick Greek yoghurt, 4 x Turkish flatbreads, Hot sauce and lemon wedges.
