James Martin serves up a very simple and easy dish to make, poached haddock and poached egg with mustard sauce on James Martin: Home Comforts.
James says: “Flaky poached smoked haddock in white sauce flavoured with a spoonful of mustard, served with poached egg and spinach is a dish you must try. The key to the dish is not to over cook the fish.”
James used a simple poaching liquor for his fish consisting of milk, sliced onions and bay leaves. For poaching the eggs he added a pinch of salt to a pan of water and added white wine vinegar.
