Henry Firth and Ian Theasby served up a tasty braised jackfruit chilli on Living On The Veg.
The ingredients for the spice mix are: 2 tsp chilli powder, ½ tsp salt, 2 tsp ground cumin, 1 tsp dried oregano, ¼ tsp ground allspice and ¼ tsp ground cinnamon.
For the Chilli: 1 400g young green jackfruit in water, 1 tbsp olive oil, 2 red onions, 6 cloves garlic, 1 celery stick, 1 carrot, 1 red pepper, 1 yellow pepper, 2 red chilli peppers, 50g walnuts, 2 tins plum tomatoes, 1 bay leaf, 1 ancho chilli (approx 6g – optional), 30g dark chocolate, 1 400g can kidney beans, 2 tsp soy sauce and 1 lime.
To serve: Brown basmati rice and Green salad.
