Gino D’Acampo pears poached in wine and vanilla recipe on Gino’s Italian Express

Gino served up delicious poached pears in red wine and vanilla on Gino’s Italian Express.

The ingredients are: 6 large pears, 750ml bottle of full-bodied red wine, 2 teaspoons vanilla extract, 1 vanilla pod, plus extra for decoration (optional), 250g caster sugar and 1 cinnamon stick, broken in half.
