Eran Tibi mum’s Aubergine, Tomato and Beef Cheek Stew recipe on Nadia’s Family Feasts

Eran Tibi served up his mum’s aubergine, tomato and beef stew with stir fried Israeli cous cous on Nadia’s Family Feasts.

The ingredients are: 1.5kg Beef cheek, cut into 4, 6 Tablespoons mild olive oil, 1 large Onion, peeled and roughly chopped, 2 large Carrots, cut into 1 inch chunks, 4 Celery sticks, cut into 2 inch chunks, 1 head of garlic, cut in half lengthways, 2L Beef stock, 5 large Aubergines, 2kg Plum Tomatoes, sliced ½ cm thick, 300g banana shallots, peeled and thinly sliced, 6 cloves Garlic, thinly sliced, 2 long chilli, thinly sliced, Salt and freshly ground black pepper.

For the cous cous: 2 Tablespoon olive oil, 2 Banana shallots, peeled and thinly sliced, ½ teaspoon Turmeric / Saffron, 500ml Chicken stock, 250gm Israeli couscous, 1 Romesco cauliflower or normal cauliflower, 1½ Tablespoon olive oil, 1½ Tablespoon sesame oil, 2 cloves garlic, peeled and thinly sliced, 1 long red chilli, thinly sliced and 20g White sesame seeds (toasted).
