Food historian Gerard Baker reveals the history behind a traditional treat – the trifle – on today’s James Martin: Home Comforts and also makes a trifle from food writer Anna Class’s 1750 recipe.

Gerard makes the trifle using a plum jelly and egg custard from egg yolks, double cream and vanilla. He decorates the trifle with an hedgehog made from sweeten cream.
