James Martin used Xanthan Gum with Salmon cured with vanilla pods and sea salt and served with cucumber ketchup

James Martin serves up a vanilla cured salmon with cucumber ketchup, charred cucumber and pickled ginger on today’s James Martin Home comforts.

James used xanthan gum to make his cucumber ketchup where it acts as a thicken agent just like corn flour.

Xanthan Gum is often used for home baking with gluten free recipes to improve the crumb structure and to reduce crumbling.

James says about his dish: “A sugar and vanilla mix is used to cure salmon overnight. Serve it cold in thin slices with tangy pickled ginger and a green ketchup.”
