Liam Charles showcased his salted caramel chocolate tart on Junior Bake Off. The young bakes were set the task of recreating the delicious treat using Liam’s recipe for today’s technical.
The ingredients for the ganache are: 170g dark chocolate, broken into small pieces, 170g milk chocolate, broken into small pieces and 340ml double cream.
For the biscuit base: 300g chocolate digestive biscuits, 2 tbsp cocoa powder, 115g butter and A little butter to grease.
For the caramel: 300g caster sugar, 100ml double cream, 85g butter, diced and 1 tsp salt.

“Some water” is ridiculous. Also 1tsp of salt is way way too much. Felt like I’d poisoned myself!
Did this recipe for Xmas.
Would not recommend it. It is badly written with a lack of clear instructions. Saying “add some water” is neither measurement or an instruction on making caramel.
In order to be able to present something for Xmas day I had to look up alternative recipes for the caramel.
Next time I will be sticking to Mary Berry recipe as that one came out fine on Xmas day!
