Simon Rimmer Crispy Oyster Mushroom Pancakes recipe on Sunday Brunch

Simon Rimmer served up tasty Crispy Oyster Mushroom Pancakes on Sunday Brunch.

The ingredients are: 12 Chinese pancakes, heated, 250g shredded oyster mushrooms, 75g flour, 75g Chinese 5 spice, Tsp chilli flakes, Salt and pepper, 6 spring onions, shredded, Half cucumber, deseeded and cut into thin half moons, Handful chopped coriander, Juice and zest 1 lime.

For the sauce: 250g plum sauce (jar), 100g finely chopped plums, tsp rice vinegar and splash of water.
