Phil Vickery served up a tasty smoked ham cooked in hay with raspberry compote on This Morning.

The ingredients are: 1 head celery, 4 large carrots, peeled, 2 onions, peeled, in chunks, small bunch fresh thyme, fresh hay, wrapped in muslin, 1kg smoked gammon joint, skin on, scored and tied up, soaked overnight in cold water.

For the compote: 4 tbsp runny honey, 1 tsp allspice, ½ tsp ground ginger, 100g currants, soaked, 100mls cider vinegar, water, 500g raspberries, cornflour, salt and freshly ground black pepper.
