Simon Rimmer Peach and Amaretto Fool recipe on Sunday Brunch

Simon Rimmer served up delicious peach and amaretto fool on Sunday Brunch.

The ingredients are: 4 x peaches, cut into chunks, 200g honey, 30ml amaretto, 25g butter, zest half orange and 100g crushed amaretti biscuits.

For the fool: 500ml whipped cream, 1 vanilla pod and 300g thick Greek yoghurt.
