Ching’s Spring Onion Porky Potatoes recipe on John and Lisa’s Weekend Kitchen

Ching-He Huang and Lisa Faulkner served up tasty spring onion porky potatoes on John and Lisa’s Weekend Kitchen.

The ingredients: Pinch of sea salt flakes, 300g of potatoes, peeled and cut into thin matchsticks, 2 tablespoons rapeseed oil, 1 tablespoon finely chopped garlic, Knob of fresh root ginger, peeled and grated, 1 red chilli, deseeded and finely chopped, 250g lean minced pork, 1 tablespoon Shaohsing rice wine or dry sherry, ½ teaspoon dark soy sauce, 1 tablespoon low-sodium light soy sauce, 3 spring onions, finely chopped, 1 teaspoon toasted sesame oil, Large pinch of ground black pepper, 1 teaspoon chilli oil and fried egg to serve.
